Additions & Errata
4/8/25:
Section 1.2: Table 1.2 changed "protein production" to "protein synthesis"; changed "iron metabolism" to "iron absorption."
Section 1.4: Updated link in "Interactive: Sustainability" box.
Section 2.7: Added the following sentence at the end of the paragraph that comes just after Figure 2.10: "Remember, this is only true if you follow a 2,000 calorie diet as seen in Table 2.7."
Section 2.7: Updated the link in the "Interactive: How to Read Food Labels" box.
Section 3.1: Figure 3.2, added "Microvilli" label to the figure.
Section 3.3: Paragraph after Figure 3.7, removed "35 percent of Americans fifty years old or younger have diverticulosis, and" from first sentence for clarity.
Section 4.5: In the paragraph before Figure 4.14 the percentage listed was changed to "53%" to be more current (new 2024 source).
Section 4.5: Paragraph under "Diabetes and Heart Disease and Their Hypothesized Link to Excessive Sugar and Refined Carbohydrate Consumption" was updated with newer information.
Section 4.5: Under "Health Benefits of Whole Grains in the Diet," last paragraph and bullets were updated with newer information.

Section 5.5: Added the following sentence after the first sentence of the second bullet under "Omega-3 and Omega-6 Fatty Acids": Linoleic acid can be found in foods like soybean and corn oil which is more abundant in our food supply.
Section 6.5: Updated broken link in "Interactive: World Hunger" box to new link.
Section 7.4: Table 7.2 was updated with current data for Adequate Intake at this source: https://www.ncbi.nlm.nih.gov/books/NBK545436/. The "Tolerable Upper Intake Level (mg/day)" column was removed.
